Fish supply is available all the year but the peak is the flood season from July to November.  Nguyen Hoang Phong, owner of “Teacher Man-Ms. Hue” fish sauce shop, said his family has a family secret recipe to produce fish sauce from fresh fish without cooking the fish. Phong said: "We have raw Thai fish sauce made from snakehead and goby fish.  Minnow and gourami fish sauce are used in fish hotpot or braised fish. We buy fish from Long Binh and An Khanh during the flood season. We process fish and put them in salt in 2 weeks. Then we clean the fish and put them in powdered grilled rice in 3 about months when the sauce is ready to use."
