Broken rice with BBQ pork chop and meatloaf

(VOVWORLD) - "Com Tam Suon Cha Trung" or broken rice with grilled pork chop and meatloaf is as familiar a dish in Ho Chi Minh City as "Pho" or "Bun Cha" is in Hanoi. “Cơm tấm” is enjoyed with grilled pork, thinly shredded pork skin and green and pickled vegetables. Today, Chef Rice from theVietnam Chefs' Association will show you how to make this dish in a traditional style. 

Hello. I’m Chef Rice. I’m Chairman of the Vietnam Chefs' Association. Today, I’m more than happy to be in the Food Delight Program to help you refresh your daily palate with an unusual rice dish named “Com tam suon cha trung” - Broken rice with BBQ pork and egg meatloaf. Have you ever heard of it? Uhm. People in Saigon seem familiar with this dish as they eat Com tam anytime of the day, for breakfast, lunch, and dinner.  And today, Mr Rice is here to share the secret of how to prepare broken rice in the Saigon style.

For ingredients & seasonings, we need:  

*03 cups of broken rice
*For the pork chop (Suon nuong  BBQ): 
Pork chop; minced lemongrass; minced garlic; fish sauce; soy sauce; honey; a pinch of black pepper; and vegetable oil
*For the meatloaf  (Cha trung): You need some glass noodles or mien soaked in warm water and chopped;  dried wooden ear mushrooms soaked in hot water for 15 minutes and then finely chopped; 4 eggs;  minced pork; and shallot finely crushed /minced; fish sauce; vegetable oil; salt; and pepper
*Others: tomato; cucumber; pickled daikon and carrots; scallion oil; and shredded pig skins

Now, let’s move to the instruction 

Step 1: Wash the broken rice a few times until the water becomes clear. 
Add hot boiling water to barely cover the rice. The rice is then cooked in a rice cooker. 
Step 2: Combine the minced lemongrass, garlic, soy sauce, fish sauce, honey, pepper and vegetable oil in a large bowl, mix well. Rub the marinade on both sides of the pork chop and set aside for a few hours or overnight in the fridge. Preheat the oven to 190°C (375°F) for 15 minutes to bake the pork chop for about 30 minutes. You can also grill them on charcoal or pan-fry them, but the meat should be juicy, tender, coated in a yummy BBQ sauce and cooked just enough to give it a crispness on the outside. 
Step 3: To make the meatloaf, crack 4 eggs in a bowl, separate 2 yolks in a separate bowl. Beat the eggs and add the glass noodles, minced wooden mushroom, shallots and meat. Season to taste with salt, pepper, fish sauce and vegetable oil. Mix well. Line a square mold/container with food plastic wrap. Add the meat mixture and steam for 30 minutes. Then open the lid and spread the reserved egg yolks on the surface of the meatloaf. Steam for another 5 minutes, uncovered, to achieve a beautiful meatloaf with a yellow surface. 
Step 4: To make the oil scallion sauce: Chop the scallion finely, move to a bowl. Boil some cooking oil in a small pan then pour over the chopped scallion, mix well.   
Step 5: To assemble the dish: fluff the cooked broken rice and compress in a bowl. Then turn it upside down on a plate so that it comes out in a nice shape. Add cucumber and tomato slices, pork chop, pickled daikon and carrots. Top the rice and pork chop with some scallion oil and the shredded pig skins. Serve with a bowl of Vietnamese dipping sauce.
