B: Hello…, and hello to all our listeners! Today’s recipe is a famous Canadian dessert that is sweet, rich, and very easy to make — because there’s no baking at all!

A: We’re making Nanaimo Bars, a delicious three-layer treat from the city of Nanaimo in British Columbia, Canada.

B: Nanaimo Bars are considered one of Canada’s most iconic desserts. They became popular in the 1950s and are now enjoyed across the country at family gatherings, cafés, and festivals. What makes them special is their unique structure — a crunchy chocolate coconut base, a smooth custard center, and a glossy chocolate topping — all combined in one perfect square.

A: And to guide us through this recipe, we’re excited to welcome back Nguyen Quynh Chi, a food aficionado, who has enjoyed this dessert many times during her visits to Canada.

Chi said: "Hello everyone! Nanaimo Bars are special because they have three beautiful layers — a chocolate coconut base, a creamy custard filling, and a smooth chocolate topping. They look impressive, and they’re actually very simple to prepare."

B: “Okay, so there are three layers. Should we start with the base? Chi, what ingredients do we need for starters?”

Chi said: "For the base layer, you’ll need half a cup of butter, a quarter cup of sugar, about five tablespoons of cocoa powder, one egg, nearly two cups of cracker crumbs and one cup of shredded coconut.To make it, melt the butter, sugar, and cocoa powder over low heat, then stir in the beaten egg until the mixture thickens before mixing in the crumbs and coconut, and pressing everything firmly into a square pan to chill in the fridge."

A: Done! The base layer! I guess now we move on to the middle one? The creamy one, right?

B: The custard layer, to be exact!

Chi said: "For the custard filling, you’ll need half a cup of softened butter, two tablespoons of custard powder, two cups of powdered sugar, and just a few tablespoons of milk to make it smooth and creamy. To prepare it, beat the butter until soft, mix in the custard powder and powdered sugar, then slowly add milk until smooth before spreading the mixture evenly over the chilled base and returning it to the fridge."

A: Actually, to save time, Chi has already prepared the base and the custard layer and refrigerated it for 30 minutes beforehand.

B: Finally, it’s time to add the top layer!

Chi said: "For the chocolate topping, you only need chocolate and a small amount of butter to help it melt smoothly. To finish the dessert, melt the chocolate and butter together, let it cool slightly, then pour it over the custard layer and put it back in the fridge for about an hour until the bars are firm and ready to cut."

A: That sounds absolutely delicious, Chi. I love how simple the ingredients are, but the result looks so elegant.

B: And since there’s no baking required, it’s a perfect dessert for beginners or for making with friends and family.

A: Oh, and just remember to let the bars sit at room temperature for a few minutes before cutting, so the chocolate on top doesn’t crack.
