Today, a friend of ours, Andrew Diatroftoff from San Francisco, California, will show us how tacos are made.

“Taco is very simple. You fry the taco shell, which is made from flour or corn. When it’s done at home, I would cook them with flour, just because they’re a little bit harder to keep from breaking when you cook with corn. They tend to break. And you fry that flour tortilla. For me, I like to have chicken tacos. I bake chicken usually. I buy chicken thigh and cut that up and marinate with sauces," Andrew said.

"Making the sauce is very easy. You just put all the ingredients into a food processor, which is like a blender. Onion, tomatoes, peppers, garlics, and you mix them all together. You marinate for like an hour with the chicken. And then you preheat the oven for 400 and bake it for about an hour or an hour and a half. It’s really good. You stuff the tortilla with the chicken and then you can put like sour cream, avocado, cheese, peppers, whatever you want.”

A: Andrew’s tacos remind me of a recipe that was introduced in a previous edition - Mexican fajitas. It’s also a dish with grilled or fried meat that can be served on a flour or corn tortilla.  Do you think they’re 1 dish with 2 different names?
B: Tacos and fajitas are both hot Mexican dishes that involve wrapping tortillas around sizzling meat. These dishes might seem similar at first, but upon closer inspection they're actually quite different. Tacos are usually accompanied by generous portions of lettuce, tomato, cilantro, jalapeño, and onions that are diced fine and assembled with seafood, chicken, pork, or beef. It might sound like a lot, but I promise these come together quickly and efficiently, like a salsa dance.
A: In any case, the reward is well worth the effort.

“You can make tacos on Sunday or celebration days, or whenever you feel like it. They’re very simple to make and really good. You don’t even have to go out to the store to buy ingredients for tacos. Your refrigerator probably already has most of the ingredients you need,” Andrew said.

B: When you make tacos at home, you can adjust the ingredients and seasoning to your taste. There’s no reason to take the family out when you can make tacos at home.
