B: We met Mrs. Le Thi Hoa, a street vendor who has been making Grilled rice crackers for years.

A: She now reveals the necessary ingredients for the snack.
“Making grilled rice crackers is not complicated. The toppings include green onion, fried onion, stir-fried pork, fried shrimps, and fresh quail eggs. You can use chicken egg instead or add sausage if you like. The ingredients may vary depending on your taste,” Mrs. Hoa said.
A: According to Mrs. Hoa, the rice paper should be of medium thickness. Both chicken egg and quail egg are acceptable but quail egg appears to be more delicious.
B: If you make this cake at home but don’t have a charcoal stove, you can use a gas stove in the medium heat instead.
“All you need to do is spreading the toppings I’ve listed over the rice paper and grill over char coal. You should use no more than 2 or 3 quail eggs or the cake will be lumpy or not crispy as expected. When grilling, I use a spoon or a pair of chopstick to spread the ingredients well over the rice papers. This dish takes just a few minutes to make. I strongly suggest it be served hot,” Mrs. Hoa added.
