A: Hello, and welcome to Food Delight, where we explore the stories behind the foods we love.

B: Today, we’re exploring the world of French-style pastries and a cake that combines striking presentation with layers of delicate flavors.

A: It’s called Gato Entremet, and it’s one of La Parisienne’s specialty cakes. But what exactly is an entremet, and why is this larger version so popular for special occasions?

B: Thanh Tung of La Parisienne told VOV: “Gato Entremet is essentially a larger version of the modern entremet. In terms of structure and pastry-making techniques, it retains the characteristic features of an entremet, with multiple layers of flavor. The main difference is its size. Instead of being a small cake designed for one or two people, Gato Entremet is made larger and given an artistic, eye-catching appearance. This makes it suitable for special occasions such as birthdays, anniversaries and parties with larger groups of people.”

A: Its larger size makes it perfect for sharing, but the layers inside are what really set it apart. Each adds something different, from the soft mousse to the crunch of the base or filling.

B: Tung explains how those layers come together to create a cake that looks as good as it tastes.

“A Gato Entremet usually has several layers. The mousse, which makes up most of the cake, has a smooth and delicate texture. It's combined with a thin layer of sponge cake or biscuit, a fruit filling or ganache at the center, and sometimes a crunchy layer to create a contrast in texture. The outside is finished with a smooth, velvet-like coating, giving the cake its refined appearance," said Tung.

"The most important stage is assembling the layers and setting the cake in its mould. Since mousse makes up most of the structure, its smoothness and stability must be carefully controlled so that the cake holds its shape when cut. It's also essential to position the filling and cake layers correctly, so that each layer is clearly visible in the cross-section while the flavor’s still blend harmoniously,” Thanh Tung said.

A: Making an entremet takes technical skill and a keen eye for detail. In modern pastry making, presentation matters, too. A cake’s appearance can be just as carefully planned as its flavors.

B: A beautifully crafted cake may catch your eye, but the flavor is what makes it memorable. And with Gato Entremet, there’s more than meets the eye.

A: So, beyond its elegant appearance, what makes Gato Entremet special? Let’s hear from Tung.

“Compared with a traditional gateau, which mainly consists of sponge cake and cream, Gato Entremet has a much lighter and smoother texture because mousse makes up most of its structure. As you eat it, the cake almost melts in your mouth, while you experience different layers of flavour, such as mousse, fruit or chocolate filling, and a thin layer of cake inside," said Tung.

He added: "This delicate combination gives Gato Entremet a more modern and lighter dessert experience than a conventional gateau. It's particularly suitable for birthdays, anniversaries and family gatherings. Enjoying it with tea or coffee also helps balance the flavors and makes the cake even more enjoyable.”

A: It sounds like every layer has a role to play. The smooth mousse, flavorful filling, and crunchy elements bring something different to every bite.

B: With its elegant appearance, Gato Entremet can be both the centerpiece of a celebration and a dessert to share with family and friends. It’s a great example of how modern pastry making brings together technique, texture, and presentation. We hope you’ve enjoyed learning about this modern layered cake.

B: Until next time, keep exploring, keep tasting, and enjoying the wonderful world of food. Goodbye!
