A: Baker Nguyen Anh Tuyet says a good banana cake starts with choosing bananas at the right stage of ripeness.
“Fully ripe bananas are usually the best choice for baking because they develop a richer natural sweetness and a much more noticeable aroma. As the bananas bake, they become soft and blend smoothly into the cake batter, creating a texture that feels moist, tender, and light. The riper the bananas are, the softer, moister, and more fragrant the cake becomes,” Nguyen Anh Tuyet said.
A: Banana cake is known for its warm, homemade feeling. At Cap Cap Bakery, that familiar flavor is kept very simple and natural.
B: The chocolate is added quite gently, not to make the cake richer or sweeter, but to give a little contrast while still keeping the fragrance of ripe bananas at the center.
A: And according to baker Nguyen Anh Tuyet, that balance is what makes the cake feel complete.
She said: “Bananas bring natural sweetness and a very distinctive aroma. When combined with chocolate, the slight bitterness of the chocolate balances the sweetness of the banana. These two flavors complement each other quite harmoniously. As a result, the cake becomes both fragrant and richer in flavor.”
A: Getting that balance right, however, takes a bit of care throughout the baking process.
B: Because with banana cake, even a small change in sweetness or texture can affect the overall flavor quite noticeably. Tuyet shared more about how the cake is prepared and adjusted.
“First, I mash the ripe bananas to create the base of the cake. Then I mix them with eggs, sugar, butter, and oil to make the wet mixture. After that, I add flour and cocoa powder and mix everything evenly, before folding in chopped dark chocolate. Finally, the batter is poured into a baking mold and baked until the cake is soft, moist, and fully set. Because bananas already contain a natural sweetness, I usually reduce the amount of sugar in the recipe. Using darker chocolate also helps create better balance. In the end, the charm of banana cake still comes from the banana flavor itself, so it’s important to keep the banana and chocolate in harmony,” Tuyet said.
A: Because ripe bananas already have quite a strong natural sweetness, the chocolate also needs to be chosen carefully so the flavors remain balanced.
B: Rather than making the cake richer or heavier, the chocolate is there to add just a slight contrast to the softness and aroma of the bananas. And for Tuyet, the cocoa level of the chocolate can make a noticeable difference in the final flavor.
She said:“From my experience, dark chocolate with around 55 percent cocoa tends to work best for this cake. It has a light bitterness that balances the natural sweetness of ripe bananas without overpowering their flavor. Even after baking, the chocolate still keeps its distinct taste, which helps the cake feel more balanced overall. I also find that banana chocolate cake pairs very naturally with coffee, because the slight bitterness of coffee brings out the aroma of both the banana and the chocolate. Black tea or fruit tea can work nicely as well, while milk makes it a simple and comforting breakfast option. Overall, it’s a cake that goes easily with many different kinds of drinks.”
