B: One of those places is Cap Cap Bakery in Hanoi. Since opening in 2014, it has focused on handmade baking in small batches. Instead of producing large quantities, they pay close attention to every cake, using natural ingredients while avoiding excessive sweetness.

A: Behind the bakery is Nguyen Anh Tuyet, who believes that the secret to a memorable brownie begins not with complicated recipes, but with understanding what each ingredient contributes.

"A basic brownie is usually made with chocolate, butter, sugar, eggs and flour. The chocolate and butter create richness and depth of flavor, while the eggs give brownies their characteristic soft and slightly chewy texture. Sometimes I also add a little vanilla, salt or coffee to enhance the chocolate even more," Tuyet said.

B: I agree with Ms Tuyet that a good brownie isn't about using more ingredients, it's about using each one well. Chocolate remains the star and butter brings richness, while eggs and flour work together to create the brownie's soft, fudgy texture.

A: Even the smallest additions can make a difference. A pinch of salt enhances the chocolate, while a little vanilla or coffee adds depth without overpowering the cake.

B: Technique matters just as much as the ingredients. Unlike sponge cakes, brownies aren't meant to be light and airy. Gentle mixing and careful baking help create their signature crisp top and moist center.

"I usually melt the chocolate together with the butter to create the base. Then I whisk the eggs and sugar until smooth and glossy before folding in the flour and the chocolate mixture. Finally, the batter goes into the pan and is baked at a moderate temperature, so the brownie develops a thin crust while staying moist inside," Tuyet again.

A: At first glance, brownies may look like chocolate cake, but the two are quite different. While chocolate cakes are light and fluffy, brownies are known for their dense texture, rich chocolate flavor and moist center.

B: Brownie lovers have different preferences. Some enjoy a light, cakey texture, while others prefer brownies that are chewy or fudgy. But most bakers agree that the better the chocolate, the better the brownie.

"For me, chocolate has the biggest influence on a brownie's flavor. The better the chocolate, the richer and deeper the taste. But it's not just about the chocolate. Getting the right balance of ingredients is just as important, because that's what gives the brownie its moist texture and its delicate, slightly crisp top. I don't think there's any special secret to making a good brownie. What really matters is getting the basics right. The ingredients need to be measured accurately, the chocolate should be at the right temperature when it's mixed into the batter, and the baking time and temperature have to be carefully controlled. If the brownie stays in the oven for too long or the heat is too high, it can easily dry out,” Tuyet elaborates.

A: For Tuyet, baking isn't about secret tricks. It's about precision, patience and consistency.

B: When all those elements come together, the result is a brownie that's deeply chocolatey, perfectly balanced and satisfying in every bite.

"When everything is well balanced, you get the soft, moist texture that makes a brownie so enjoyable. Our brownies are made to be moist and deeply chocolatey rather than overly sweet. When you take a bite, you'll notice a thin crust on top, while the inside stays soft with a light chew. The texture isn't too dense, so it suits Vietnamese tastes quite well," Tuyet said.

A: Food trends may come and go, but some desserts never go out of style. The brownieis one of them. With just a few everyday ingredients and careful craftsmanship, brownies offer something that's both simple and deeply comforting.
