B: And I’m B. The Mid-Autumn Festival is more than a month away, but whenever it comes around, some things never change. Families gather, tea is poured, and mooncakes take pride of place on the table.
A: But the mooncakes themselves are changing. Traditional flavors are still popular, while bakers are finding new ways to make familiar combinations more appealing.
B: One example is the lotus seed mooncake with salted egg yolks and soft snow skin. The flavors are classic, but this one comes with a generous twist — four salted egg yolks in a single mooncake.
A: For that, Food Delight is visiting Savor Cake, a bakery that started out with online birthday cakes and later developed a modern cloud-kitchen model. The brand also appeared on Shark Tank Vietnam Season 6, where founders Le Tuan Hiep and Vy Tuan Anh secured a 3-billion-VND (115,000 USD) investment for 17% of the company.
B: Doan Thi Ngoc Anh, who manages Savor Cake’s kitchen, tells us about the ingredients, the making of this four-yolk mooncake, and what makes it stand out.
“The snow skin is made from glutinous rice flour, which gives it a soft and chewy texture. The lotus seed filling is cooked until it is smooth and moist, so it does not feel dry or crumbly. The salted egg yolks are carefully prepared to reduce any strong smell while keeping their golden color, rich taste, and creamy texture. The most important part is balancing these three elements. A good mooncake should have the gentle aroma of glutinous rice, the light sweetness of lotus seed, and the rich, savory taste of salted egg yolk. If one flavor is too strong, it can hide the other flavors,” Ngoc Anh said.
A: So while the ingredients are all familiar in a traditional mooncake, the combination of four salted egg yolks gives this version a richer texture and a more striking appearance.
B: And getting that balance right is not as simple as putting more filling into the cake. Each component has to be prepared carefully before they are brought together.
A: That brings us to the making of the mooncake.
“Each part of the mooncake is prepared separately before assembly. The snow-skin dough is mixed in the right proportions so that it stays soft and keeps its shape. The lotus seed filling is cooked until it has the right smoothness and moisture. The four salted egg yolks are placed evenly so that every slice contains both filling and egg yolk. The most difficult part is controlling the moisture in the snow skin and the filling. If the filling is too dry, the mooncake will lose its soft texture. If it is too moist, the cake will not keep its shape or detailed pattern. The baker must also press the cake carefully to ensure that the pattern, in this case, the map of Vietnam, appears clear, sharp, and evenly defined,” Ngoc Anh said.
B: So once the texture and structure are right, the next challenge is getting the flavors into balance.
A: How does Savor Cake keep the mooncake rich without making it too sweet or too salty? Let’s hear more from Ngoc Anh.
“We make the lotus seed filling moderately sweet so that its natural flavor is clear without covering the taste of the salted egg yolks. The egg yolks are also carefully prepared to reduce the salty taste while keeping their rich and creamy flavor. When you take a bite with the snow skin, lotus filling, and salted egg yolk, you first notice the gentle aroma of glutinous rice. Then you taste the smooth lotus filling and the rich, savory egg yolk. The flavors appear one after another, creating a balanced taste without an overly sweet aftertaste.”
