B: It’s nearly one month until the Mid-Autumn festival, which falls on the full-moon day of the 8th lunar year, the atmosphere of the festival is already on streets across Vietnam with shops selling moon cakes resuming their business.
A: Have you had your first mooncake yet? And if you have, did you notice anything different about this year’s flavors?
B: When it comes to mooncakes, the filling is often what gives each cake its character. A familiar pastry can taste completely different depending on what you find inside.
A: That’s true. And these days, bakers are paying just as much attention to texture as they do to flavor, whether a filling is creamy, chewy, nutty, or even designed to flow.
B: For this year’s Mid-Autumn season, the Savor Cake in Hanoi has brought together a range of flavors in its gift set, from familiar choices such as mixed nuts, green bean and young coconut to savory fillings, as well as more contemporary flavors including matcha pistachio, oolong tea, and red date and cordyceps.
A: Among them is a particularly intriguing one: Luu Sa dark chocolate lava. Luu Sa is a name commonly used for mooncakes with a smooth, flowing filling.
B: And here, that flowing filling is made with dark chocolate. So, what is the experience like when you cut into it? Ngoc Anh from Savor Cake tells us more: “What I like most about the Luu Sa dark chocolate lava mooncake is how the filling slowly oozes out when the cake is cut. Inside, there is a smooth dark chocolate filling with a soft lava texture. From the first bite, you can taste the strong cocoa flavor. It is rich, slightly bitter, creamy, and not too sweet, with a pleasant cocoa aftertaste.”
B: I can imagine that first cut being quite satisfying - seeing the chocolate slowly come out before you even take a bite.
A: And that flowing center is also what makes this kind of mooncake more technically challenging to make. The filling needs to behave in a very particular way.
B: So, how can we create that consistency without making the filling too runny or too firm? Ngoc Anh has the answer. “The biggest challenge was creating the right lava filling. It had to be soft enough to flow but still thick enough to stay stable. When the texture is right, the chocolate feels smooth, rich, and enjoyable without being too heavy. This is a good choice for dark chocolate lovers who prefer a strong cocoa flavor and less sweetness.”
A: The texture has to be carefully judged, but the flavor matters just as much. Dark chocolate brings a stronger cocoa character and a slight bitterness, which can keep a rich filling from becoming overly sweet.
B: And once you have the recipe, there is still the challenge of making sure every batch turns out the same. That comes down to how the ingredients are measured and how the cakes are prepared, stored and checked.
A: Ngoc Anh further elaborates on the process behind that consistency: "Each mooncake follows its own recipe and clear standards for weight, moisture, temperature, and preparation. Our bakery team measures every ingredient, checks the filling before shaping, and inspects each cake after it is finished. For the two lava-filled varieties, the biggest challenge is getting the right texture. The filling must be soft and smooth enough to flow, but still thick enough to stay stable. We carefully control the ingredient ratios, cooking temperature, and storage conditions. We also test each batch to make sure every mooncake has the same quality.”
B: There’s clearly a lot of precision behind that small moment when the filling starts to flow. And that’s one of the interesting things about food. What looks simple on the plate can involve quite a bit of care and technique behind the scenes.
A: Especially with mooncakes, where tradition provides the familiar shape, while the filling leaves room for new ideas. This Mid-Autumn season, a slice of mooncake can still bring people together in the familiar way, but what’s inside can offer a new experience, too.
B: And perhaps that is the appeal of exploring different flavors and textures: the tradition stays, while there is always something new to discover.
